Just Like Tita's
When I was a kid, my aunt Tita Cing, made jars of candied pecans around the holidays and I went nuts for them (buddum bum!). They were addictive. She made a simple syrup out of sugar and water to make her candied nuts. I decided to mimic Tita’s pecans using maple syrup. So easy, and I think she’d be impressed, God rest her soul.

1 cup raw pecan halves
1/8-1/4 cup pure maple syrup
pinch or two of salt
optional: sprinkle of cinnamon
Heat a wide non-stick skillet to medium high heat. Toast the pecans stirring often until fragrant. Add the maple and stir frequently with a wooden spoon or spatula until all the liquid is absorbed and the nuts are crystalized. Sprinkle with salt and cinnamon. Spread on a plate or baking sheet to cool and harden. Store in an air tight container.
